Classic Chocolate Chip Cookies | Gluten, Dairy, Soy -free
1. tsp baking powder (I like Rumford's because it's aluminum-free)
1/2 tsp. baking soda
1/2 tsp. salt
1/2 C. vegetable shortening (I use Spectrum Naturals Organic Shortening made from palm oil)
1/2 C. brown sugar
1/4 C. sugar
1 egg
1 tsp. vanilla
1 C. chocolate chips (I use Enjoy Life chocolate chips)
Preheat oven to 375.
In a bowl, mix flour, baking powder, baking soda, and salt.
In a separate bowl, whisk shortening, brown sugar, and sugar until incorporated and fluffy. (This is a little tough to do because the shortening doesn't budge that easily. A fork might be easier)
Add in the egg and vanilla and beat until mixed well.
Slowly add in flour, mixing gently.
Stir in chocolate chips.
Scoop tablespoons of dough onto lined baking sheet and bake 10-12 minutes.
